What’s in Tatis Bread?

We keep it real. Here are our full ingredients: Water, millet flour, tapioca flour, sorghum flour, psyllium husk, cane sugar, olive oil, apple cider vinegar, salt, and yeast. No gums, no preservatives, no
weird stuff—just simple, clean ingredients that work beautifully together.

How long will it take to get my orders?

Yes! Tatis Bread is 100% gluten-free and made in a dedicated gluten-free environment to keep it safe for those with celiac or gluten sensitivities.

Millet is a naturally gluten-free ancient grain that’s gentle on the tummy and packed with nutrients. It gives our bread a lovely
texture and subtle, earthy flavor.

Why is the bread frozen?

Freezing keeps it fresh without preservatives. It also
helps preserve the texture and taste—so every slice feels like it just came out
of the oven.

Studies suggest that freezing bread can lower its glycemic
response, meaning it leads to a slower rise in blood sugar levels compared to
fresh bread. This happens because freezing alters the structure of starch
molecules, making them more resistant to digestion. One study found that
freezing and then reheating white bread resulted in lower post-meal blood sugar
spikes than fresh bread. The peak blood glucose level for fresh bread was
recorded at 132 mg/dL, while frozen and reheated bread peaked at 120 mg/dL,
showing a significant reduction 【56】.



Additional research from Oxford Brookes University indicated that freezing and
then toasting bread reduced its glycemic response by almost 40%, compared to
fresh bread. This change is due to the formation of resistant starch, which
slows digestion and the release of glucose into the bloodstream, helping to
maintain more stable blood sugar levels 【57】.



Another study found that homemade bread, when frozen and thawed, reduced blood
sugar spikes by 31% over two hours. If the bread was toasted after freezing,
the reduction was even greater, at 39% 【58】.



These findings suggest that freezing bread could be a beneficial strategy for
people looking to manage blood sugar levels and possibly reduce the risk of
insulin resistance. However, the health impact may vary depending on the type
of bread and individual metabolism.
